How to Spice Up Baked Chicken

How much chicken do you eat in a week?

If you’re like me it’s a daily affair when you’re working toward building muscle. It’s hard to get enough protein from anything other than chicken breast. One of my favorite ways to make plain baked chicken a bit more exciting is to serve it with pineapple salsa.

I use half of a fresh pineapple, diced (about 2 cups)
1 medium size red onion, diced
1 bunch of cilantro, chopped (about 1/4 cup)
Plus the juice of 1 lime.
Mix until combined. Serves 4.

Just in case you’re tracking macros it’s 55 calories per serving, 14g carbs, 0g fat, 1g protein, per serving.

Most of the time I’m able to make it a day ahead and let it sit overnight in the fridge. However, it’s ok to prepare an hour ahead or so.  Add some tortillas, I like corn since I’m gluten free, chop up some lettuce to go with, and you have some yummy chicken tacos.  Pineapple salsa can also be used with fish or even eat with tortilla chips. But, no matter how you serve it…it’s absolutely worth the effort to make!
